How to Dry Cherry Tomatoes!
I just discovered what I can do with all of my TONS of cherry tomatoes!
DRY THEM!
Yes it’s true. I just discovered a new favourite snack. They are delicious!!! They are really good just out of the oven and my mother and I just sat there stuffing our faces and giggling like we just discovered a pot of gold or something…………….. It was really quite weird.
I always have tons of tomatoes and although it’s pretty easy to know what to do with the larger ones I am always stumped as to what to do with the mountains of cherry tomatoes I am left with.
Here is how we did it:
Just cut them in half like so. I used 2 different varieties.
Then just drizzle some olive oil over the top.
I add a clove of garlic in the middle. The flavour leaks into the surrounding oil so that when you toss them at the end the tomatoes are coated with garlic oil goodness. :) BONUS… you can spread the soft garlic on a cracker when you are done! Also sprinkle some oregano, salt and pepper on them.
Put in a 225 degree oven for 4 hours. They will be crispy like a potato chip!
The larger red ones stayed somewhat soft. WOW what flavour!!!!!!!!!
I can’t wait until I can put them on a salad this winter or in a stew or on a pizza or or or OR…..
Just put them in a pretty mason jar and put in the freezer. I do this because of the oil and just incase some were not completely dry. Just be prepared that when oil is frozen it looks unappetizing, however, once thawed they are as good as new!!! ENJOY!!
