Red Neck Chocolate Chip Cookies

The reason why we call these cookies “Red Neck Chocolate Chip Cookies” is because, here on this here property, we most lovingly, teasingly, sometimes revengefully (depending on our mood) call each other red necks. Why? Because what’s life without a sense of humour? If you can’t make fun of yourself , I figure you’re way too serious and really need a kick in your arrogant pants.
Ingredients
- 2 Cups – Quick Oats
- 1 – 1/2 Cups – All Purpose Flour
- 1/2 Cup – Whole Wheat Flour
- 1 Tsp – Baking Soda
- 1 Tsp – Baking Powder
- 1/2 Tsp – Salt
- 1/2 Cup – Sweetened Shredded Coconut
- 1 Cup – Butter (Room Temperature)
- 1 Cup – Packed Brown Sugar
- 1/4 Cup – White Sugar
- 2 Tbsp – Honey
- 3 Tsp – Vanilla
- 2 – Eggs
- 1 Cup – Bitter Sweet Chocolate Chips
- 1 Cup – White or Butterscotch Chips
- 1/2 Cup – Chopped Walnuts
- 1/2 Cup – Chopped Pecans
MIX ALL TOGETHER AND SET ASIDE
IN A SEPERATE BOWL BEAT THE FOLLOWING INGREDIENTS UNTIL FLUFFY:

MIX WET INGREDIENTS WITH THE DRY INGREDIENTS AND THEN FOLD IN THE FOLLOWING:
Instructions
- Preheat oven to 350 degrees
- Mix dry ingredients together (exlude chips and nuts)
- Mix wet ingredients together
- Mix the dry and the wet together
- Fold in chips and nuts
- Make balls and put on a parchment paper or Silpat lined baking sheet
- Put in oven for 10 minutes
- (If you want a softer cookie use less time and if you want a crisper cookie add a couple of minutes)
- *You can wrap raw cookie dough in plastic wrap and store in fridge OR put in the freezer until ready to use*
