Cranberry Struesel Muffins
Ingredients
STRUESEL:

- 1/2 Cup – Flour

- 1/2 Cup – Large Flake Oats

- 1/2 Cup – Brown Sugar

- 1/2 Cup - Butter
-
- 1/2 Tsp – Cinnamon
-
- 1/4 Tsp – Nutmeg

BATTER:
-
- 2 Cups – All Purpose Flour
-
- 1 Cup – Packed Brown Sugar
-
- 1 Tsp – Baking Soda
-
- 1/2 Tsp – Table Salt
-
- 2 – Eggs
-
- 1 Cup – Buttermilk
-
- 1/4 Cup – Melted Butter
-
- 2 Tsp – Vanilla
-
- Rind of 1 Lemon (Use Rasp)

FOLD IN:
-
- 1 Cup – Cranberries
Instructions
- Preheat oven to 375 degrees
- Mix Struesel in a bowl and set aside
- Mix the wet ingredients together
- Mix the dry ingredients together
- Mix the dry and wet together until JUST combined
- Fold in Cranberries
- Fill paper lined muffin pan
- Top each with struesel topping
- Bake for 25 minutes
