Cranberry Struesel Muffins

Ingredients

    STRUESEL:
  • 1/2 Cup – Flour
  • 1/2 Cup – Large Flake Oats
  • 1/2 Cup – Brown Sugar
  • 1/2 Cup - Butter
  • 1/2 Tsp – Cinnamon
  • 1/4 Tsp – Nutmeg
  • BATTER:
  • 2 Cups – All Purpose Flour
  • 1 Cup – Packed Brown Sugar
  • 1 Tsp – Baking Soda
  • 1/2 Tsp – Table Salt
  • 2 – Eggs
  • 1 Cup – Buttermilk
  • 1/4 Cup – Melted Butter
  • 2 Tsp – Vanilla
  • Rind of 1 Lemon (Use Rasp)
  • FOLD IN:
  • 1 Cup – Cranberries

Instructions

  1. Preheat oven to 375 degrees
  2. Mix Struesel in a bowl and set aside
  3. Mix the wet ingredients together
  4. Mix the dry ingredients together
  5. Mix the dry and wet together until JUST combined
  6. Fold in Cranberries
  7. Fill paper lined muffin pan
  8. Top each with struesel topping
  9. Bake for 25 minutes
